Contract / Freelance (Short-Term Project-Based)
We are seeking an experienced Food Product Development Consultant with a strong background in dried meat products—particularly ostrich biltong, droëwors, and chili bites. This short-term consulting role focuses on enhancing our current product range and developing a new, market-ready recipe using ostrich meat.
You will collaborate with our team to review existing products, improve production techniques, and create a new premium product that meets both quality and consumer appeal standards.
Key Responsibilities:
- Evaluate and provide feedback on current ostrich dry meat products: biltong, chili bites, and droëwors
- Recommend enhancements to taste, texture, consistency, and shelf life
- Improve existing processes for better yield, hygiene, and flavour retention
- Develop a new ostrich-based dry meat product, including spice blend and drying process
- Guide on ingredient ratios, preservation, and regulatory compliance
- Assist in product testing and refining final recipes
Requirements:
- Proven experience in developing dried meat products (biltong, jerky, or similar), ideally with game or exotic meats
- Strong knowledge of spice formulation, curing, and air-drying techniques
- Background in food science, meat processing, or culinary innovation
- Ability to work independently and deliver actionable results
