A fast paced, FSA accredited, successful family run, wholesale bakery serving the needs of the retail, food service and hospitality industry, as well as regional and national distributors in South Africa is looking to employ an Assistant Baker to assist with all high volume Basic products preparations (rolls), mixing, shaping and proofing processes, meeting efficiency benchmarks, adhering to quality, food safety and housekeeping standards & practices and assisting where required.
Duties and Responsibilities:
· Able to accurately scale to specifications/ recipes relating to dedicated products range (rolls and basic dough mixes)
· Plans all aspects of the bake mix as per specifications, efficiently and to standards
· Ensure that correct number of trolleys are available to avoid any dough transportation delays
· Able to prepare dough mixes to required sequence of products production schedules on the line and related specifications
· Follows the mixing procedures accurately and consistently achieving bake of products consistency and zero mixing related waste
· Meeting product baking benchmarks as part of production targets; productive member of the team
· Control from batch to batch depending on mix ingredients that may have allergens spill-over effect or other effects/defects
· Observe temperatures and mixing conditions (flour conditions, weather/ temperature, water temperature, etc.)
· Has a basic understanding of the processes and parameters regarding the make-up of rolls, e.g. Hotdog, Hamburger, Portuguese etc.
· Able to perform calculations relating to level 1 scaling, mixes, and production outputs
· Able to read and deduct quantities and baking requirements from basic productions sheets
· Understand production processes paperwork and can complete it
· Understands and applies level 1 baking process relevant SOPs
· Understands and applies PITS related Food Safety & Housekeeping Practices (emphasis on level 1 baking processes)
· Understands and applies PITS related Quality Assurance (emphasis on level 1 baking processes) incl. allergens control
· Able to deal with agreed multiple tasks readily & competently (at level 1 baking processes)
