Job Purpose:
To oversee, coordinate, and optimise production activities in both Low Care and High Care processing areas within a fresh produce manufacturing facility. This role ensures production targets are met in line with safety, quality, hygiene, and operational efficiency standards, while maintaining compliance with food safety regulations (including HACCP, FSSC 22000, ISO 22000, and retailer standards).
Key Responsibilities:
1. Production Planning & Coordination
· Assist in preparing and implementing daily/weekly production schedules for Low Care and High Care areas.
· Coordinate the flow of raw materials, work-in-progress, and finished goods between areas.
· Ensure smooth changeovers between product runs to minimise downtime.
2. Operational Oversight
· Monitor production lines to ensure output meets quality, safety, and efficiency targets.
· Balance staffing levels according to production needs, ensuring coverage in both Low Care and High Care.
· Report and escalate production delays, bottlenecks, or equipment malfunctions.
3. Compliance & Food Safety
· Enforce Good Manufacturing Practices (GMP) and Standard Operating Procedures (SOPs).
· Ensure strict segregation between Low Care (raw preparation) and High Care (ready-to-eat) areas to prevent cross-contamination.
· Maintain full compliance with HACCP, FSSC 22000, ISO 22000, retailer codes of practice, and South African food safety legislation.
· Actively participate in FSSC 22000 internal and external audits, providing necessary documentation and corrective actions.
4. Quality and Hygiene Control
· Work closely with the Quality Department to ensure products meet specifications.
· Oversee hygiene standards for equipment, work surfaces, and personnel.
· Ensure temperature, humidity, and environmental controls are monitored in High Care areas.
5. Staff Management and Training
· Supervise and coordinate production staff, providing direction, coaching, and feedback.
· Assist in training new and existing staff on production processes, hygiene, and safety requirements.
· Promote a culture of safety, efficiency, and continuous improvement.
6. Reporting and Documentation
· Complete daily production reports, waste logs, and downtime records.
· Maintain accurate records for traceability, batch control, and regulatory audits.
· Participate in FSSC 22000, HACCP, and retailer compliance audits, ensuring readiness at all times.
Key Requirements:
Education and Qualifications
· Grade 12 (Matric) – Essential.
· Relevant diploma/degree in Food Technology, Production Management, or related field – Advantageous.
· HACCP training (minimum Level 2) – Essential.
· FSSC 22000 awareness or implementation training – Advantageous.
Experience
· Minimum 3 years’ experience in a fresh produce or FMCG food manufacturing environment.
· Experience working in both Low Care and High Care environments.
· Proven track record in production planning, staff supervision, and quality control.
· Experience in FSSC 22000 audit preparation and participation.
Skills and Competencies
· Strong understanding of food safety standards (HACCP, FSSC 22000, ISO 22000, retailer audits).
· Ability to lead, motivate, and coordinate a diverse team.
· Excellent problem-solving and decision-making skills.
· Strong organisational skills with attention to detail.
· Good communication skills (verbal and written).
· Competent in Microsoft Office (Excel, Word, Outlook) and production systems.
Working Conditions:
· Factory-based role with requirement to work in chilled and temperature-controlled environments.
· Shift work and weekend work may be required to meet production demands.
· PPE must be worn in line with company policy.
